Troutdale store I was excited to see a soup focused restaurant and we will be back. However, there room for improvement in order to give it a 5 star. The African peanut soup was great. The mushroom was good with lots of mushrooms. I recommend that the mushrooms be cut smaller. Most were too big for the spoon and it became a balancing act to not drop them. This would also be good as a creamed soup which provides a better blend of mushroom with the liquid. Coming from Texas where there are a lot of displaced Loiusianians due to hurricanes, my partner was puzzled with his muffaletta. While the sandwich was good, there was about 20% more meat than that found on a traditional muffaletta, the bread did not totally cover the meat and was not fluffy like the bread used in a muffaletta. The olive tapenade was quite scant and black olive which gives a more bitter taste. The authentic muffaletta had predominately chopped green olives with oil and seasoning which was less bitter. Looking at pictures of this sandwich, the ratio of meat to bread ranges from 1:1 to 1:2. This is using the high profile bread with sesame seed on top, which was the most commonly used. Ours was 6:1 It might be best to maket this as a hoagie with a thicker profile and put it on smaller amount of mixed cheeses and meat, and note the types of both that are used in recipes found online. I asked for pastrami for the sandwich but they were out. I had the BLT sandwich. I appreciated the shredded lettuce and the tomatoes were great. The service could have been a bit more efficient. The customer could be asked if the soup and/or salad sides should be served first. Both are prepared already. The customer could be eating while the sandwiches are being made. The environment was clean, there was access to restrooms, there was plenty of seating. We will be back. It is a shame, however, that all listed soups are gluten free. There is comfort in having wheat based pastas in soup, especially during the winter, such as Italian wedding and chicken noodle soup. And some creamed soups work best with flour based thickening. But, we will be back for the peanut soup, a hot sandwich, and a side, which also looked lovely.
