The restaurant and staff present themselves very well, with great potential, but there is a lot to improve. 60 euros for an appetizer for two people (one of whom is celiac), two glasses of wine, two truffle pasta dishes, and a dessert can be an adequate price if justified by good service and quality dishes. - Two glasses of the same wine served with a difference of a finger between them (one fuller/emptier than the other) displeases the one receiving less. - Two portions of pasta (the same, with black truffle) with the only difference being the gluten-free request on one cannot have one (the gluten-free) be half of the other. In the gluten dish, there was visible cheese in one half (which was not present in the other half). Let's say one puts parmesan in the truffle pasta, they put it everywhere or at least mix it well. This shows carelessness, if not raising doubts about recycling from a previous customer. I don't want to believe or think that. Let's call it carelessness in plating. - A semifreddo cannot be frozen; specifically, a cream base cannot crunch under the teeth because it is still frozen. Positive note: quick service, but there were only about 10 customers in the whole restaurant. In my opinion, this makes the inattentions in the kitchen even more serious. What happens when the room is full? For these reasons, 60 euros are not justified. It takes little to do better, please do it.

Great cuisine. The pizza dough is exceptional, fine, crunchy, and very light...the only place in Viterbo where the gluten-free pizza is truly good and crunchy. Professional and friendly staff. Moderate prices, within the welcoming context of Balletti Park Hotel and in the freshness of San Martino al Cimino.

Varied menu and prices appropriate to the local market. Friendly and helpful staff for every request; after years, I found the first gluten-free pizza that reminded me of flavors I had forgotten. Highly recommended!
