I am celiac and unfortunately my experience was not good, even though the premises were very positive. I had lunch at this sushi place last Saturday and initially I was struck by the attention to gluten-free options: the staff seemed very knowledgeable (the soy sauce throughout the establishment is gluten-free and, unlike other places, there was a good understanding of the subject). Moreover, allergens and gluten-containing foods were clearly indicated on the menu, which is definitely a good sign. Even on the phone, when I made the reservation mentioning my celiac disease, I was told that there was no problem. Unfortunately, a few hours after the meal I had the classic reaction I have to gluten and I felt ill for several hours, which means that something went wrong. I repeat, I’m sorry because I appreciated the restaurant's commitment, but evidently there was a mistake. Perhaps an ingredient was not checked properly (I leave the photo of my order in case you want to recheck, to which I add - since it’s not listed - salmon plus and a dish called Rainbow). Or there was cross-contamination in the kitchen. I don’t know if the establishment has separate workspaces, but it could be useful to verify this to ensure greater safety for celiac customers. I am writing this review to report my experience and suggest a further check on the ingredients and procedures. It seemed to me that there was a lot of attention, so it would be a shame if some detail was overlooked. It might also be useful to evaluate whether the establishment can be truly guaranteed as safe for celiacs, or whether it is preferable to specify that, while offering gluten-free options, total absence of contamination cannot be guaranteed (as some non-AIC certified restaurants do). ___ For the rest, nothing to say: the place is new, very clean, and the staff is really nice. I chose to try it because it is the only sushi place in the area with a vegan menu, and indeed the choice was wide and interesting.
