I went there as soon as it opened and was unhappy with the quality of the dishes. They were not very attentive to gluten contamination, and both I (celiac) and other people (non-celiac) got sick, probably because the fish was not well preserved. However, the staff was very friendly, and the location was new and clean.

A new and modern venue, the quality of the sushi to be an "All you can eat" formula is superior to many others in the area, however, it's a pity about the almost complete lack of attention to gluten-free options. I've been there three times and each time I've left feeling unwell after dinner. Despite having pointed it out over the phone, to the waitstaff, and even writing notes on my orders through their app, the dishes that arrived continued to be covered with unknown sauces or tempura toppings. Every time a dish arrives at the table, you have to ask the serving waiter if it’s actually gluten-free, and each time it takes 10-15 minutes for the food to go back to the kitchen to be checked or, worse, remade. The last time they served me uramaki covered in regular soy sauce, the waiter asked the kitchen and returned literally telling me, “I’ll take this away because it’s full of gluten.” For an evening out with friends, you’ll end up finishing your meal at 10:30 PM due to the continuous checks on the dishes, so it’s a bit of a disappointment...

I went there right when it opened, and honestly, the attention was not the best. Before I figured out how to order the various dishes, I had to talk to 3-4 different waiters, despite having highlighted a gluten-free requirement at the time of booking. Aside from the fact that many dishes I ordered either didn't arrive or came with sauces containing gluten, which I obviously had to send back. The sushi was good in general, but the service was zero attention.

We are at Kaiseki sushi, located in front of the Varese train station. Environment: A place with a contemporary style, and I would also say with a futuristic touch, an environment that, as a first impression, is pleasant. Service: At the table, you can find the QR code to scan with your device, which in my opinion is a flaw because, especially in the evening, there is a vast variety of dishes, and it would be much more convenient to choose with a tablet, in addition to being more practical. The staff is very welcoming and professional, taking an interest in their customers. A more than positive note goes to the menu, which specifies in each dish if there are any allergens/intolerances. Food: The fish in general was fresh, the dishes flavorful, with distinctive tastes that stood out. The presentation of the plates was visually very nice. Perhaps the only flaw was the Udon, which were not very good. Other than that, I have nothing to say, really good, I would return. Price: The price for two menus and a water is €62.
