Show how you handle gluten free and let coeliacs know they can trust you

I used to frequent this all-you-can-eat sushi place before my diagnosis, and the thought of not being able to return was extremely painful. So I mustered up the courage and asked if they could handle a celiac person, and I was told, "No problem!" They welcomed me with gluten-free soy sauce and a sheet to order (instead of the tablet for the rest of the table). The girl at the cash register was very knowledgeable; she advised me on what I could order and what not to (no fried foods, no udon, and no dumplings). All the dishes for me were "announced" by the waiters; I ate a ton of sushi and Chinese cuisine, I was full and felt great afterward.
