The quality-price ratio is inadequate; one sandwich, one plate of pasta, some bruschetta, and two drinks, and you can see the total in the photo... they are also known for being gluten-free, and for every gluten-free dish requested, there is a surcharge of 3-4€. Absurd.

A young-minded restaurant that has managed to shape its offerings according to customer needs and is up to date. They are also open for lunch, with a different menu compared to dinner. They do not have reserved parking, but considering it is in the industrial area of Bolzano, there are options nearby. The first thing I really appreciated is that they publish their menu on their website (if nothing else, that of lunch, so I’m sharing photos of the dinner menu from December 2023, in case it might help), and they keep it updated. This greatly facilitates things for those with dietary restrictions who need to choose where to eat. And this brings me to the selection of dishes, which is very attentive to providing light options, vegetarian, and lactose-free and gluten-free choices. I tried the gluten-free pizza and I must say that, unlike others, this one is made properly: relatively thin and very crispy dough, flavorful. In short, as much as possible, a worthy substitute for the regular version of pizza, which, by the way, is also very good (according to my friends). The only drawback was the knife, which was not suitable for cutting it easily. Both the gluten-free version and the lactose-free mozzarella option are offered at a surcharge, of course, but it is great to have them available. The salads are also highly recommended, with generous portions. We arrived early, around 7:15 PM on a Saturday night, and despite the place already being pretty full, the service was very quick, as well as polite and flexible. The environment is unpretentious but overall pleasant, suitable for a lunch among colleagues or a dinner among friends, perhaps less for a romantic dinner. Prices are in line with the geographical location and current times. Recommended.

I had the privilege of tasting a fruit tart (gluten-free and lactose-free) that was undoubtedly superb! A delightful treat with no comparisons. Highly recommended.

CELIAC on the road: even though I'm "on the road", I'm here in my city and I often visit Cibus both for business lunches and evenings with friends. The food is good, I'm negative so no problems at all, the owner has celiacs in the family. It's a very spacious place, with top management for celiac customers, and the owner and staff are super accommodating. The dishes are always good and sometimes there's even a daily surprise on the menu! Recommended for those in Bolzano and for anyone passing by in their car as it's near the A22 exit, with ample parking available.

Perfect... from pizza to first courses to second courses, not forgetting kindness and professionalism. The price is exceptionally adequate to the quality. On vacation as a couple, we saw many Bolzanini at the table and dined here for two consecutive days. I repeat, perfect for anyone, including those with celiac disease.
