In a beautiful estate at the gates of Porto Torres (very close to the prehistoric site of Monte d'Accoddi), a typical Sardinian restaurant that pays great attention to gluten-free options: gluten-free guttiau bread and seadas (preferably ordered in advance), a very specific and clear menu with many gluten-free dishes (including, of course, porceddu). The owner is kind and attentive. Highly recommended.
