It's great to find a gluten-free schiacciata and attentive, knowledgeable staff who can explain why certain meats are offered and indicate the possibility of cross-contamination with other foods. This still allows for the choice of whether to try a different combination. In response to what I imagine is the owner of the Schiaccinoteca's reply, I gave 3 stars for the service because in your concept there is no service (you order, wait for it to be ready, pick up the dish, and then clean the table when finished) and three stars for the environment because while I eat, the focus is not on the number or quality of stores around me but on where I am having my meal (at a small table in the mall gallery where customers pass by). It's just a matter of personal taste, and the overall review is still 4 out of 5 stars, which seems like a good rating. If you do not appreciate the review, I would be happy to remove it.
