I used to come to this hotel since I was a child with my family and grandparents. After more than 15 years, I returned to the Metropole as a celiac and found an absolutely inclusive environment. The staff in the dining area is very well trained, the menu is made gluten-free equivalent with the same dishes and great attention. Great style and discretion from the dining staff, they already know you're celiac and bring you the dish saying softly 'gluten-free,' so there are no loud reminders like 'the dish for the celiac?!!' as often happens elsewhere. Truly great attention, quality, and elegance. I don't know if they have a separate kitchen, but with the attention they have, it almost feels like an AIC venue. A golden stay. Truly compliments to the Borile family.
