While in Pietrasanta to renovate a venue, I chose this vegan pastry shop. The elegance of the interiors is remarkable, very ton-sur-ton, but some choices are quite personal and could be architecturally improved. Overall, it turns out to be charming and unusual, very well-kept. Even though it has been recently established, it can still be improved with just a few small changes. There is a wide variety of desserts, with particularly elaborate and rich brioche. Products for celiacs are also available. I expected the option to have lactose-free milk, including rice and oat milk, and maple syrup, which I find a significant common shortcoming in all pastry bars in Italy. The raw sugar offered is not a healthier or greener product. There is also a great variety of savory options that I plan to try as I will frequently come to Pietrasanta for my clients; it's a beautiful 'gorgeous town,' elegant and typically a bit country-style, like the pastry shop in question. The savory items also appear carefully crafted. I consider the prices particularly high, justified in part by the quality of the products but also because an expert pastry chef can create these precious and wonderful brioche in a short time. Commendable and special, in any case, is the initiative to offer such elaborately refined desserts. They also lack the crostata and small crostate, which I personally adore. Their mission is also not to offer animal-derived products. However, the typical Tuscan rice pudding is also missing, which is a must-have. Parking is not close and is paid, unless you move very quickly using the free parking. The center of Pietrasanta is entirely pedestrian, making it pleasant to take a stroll. It is not a venue suitable for someone in a rush to the office. "Accessible," located on the ground floor.
