The pizzaiolo chef, with whom I had the pleasure of discussing his gluten-free production, kindly explained to me that there is even another person dedicated to preparing gluten-free products, with a separate oven, another fryer, and of course, to dust any work surface for the production of any pizza (normal or gluten-free), they strictly and regularly use rice flour to minimize and reduce almost to zero any possibility of contamination.
