Mulino Ribelle is a 100% gluten-free bakery and pastry shop, born from the passion of Luca and Roberto for good handmade food. All products — from bread to sheet pizzas, from cakes to cookies, to fresh pasta — are prepared daily with natural gluten-free flours like rice, sorghum, millet, quinoa, teff, and corn, carefully selected and mixed into proprietary blends to ensure authenticity, low sugar content, and an authentic flavor. Nearly all production is also lactose-free, making the establishment a reference point for those with intolerances and for anyone who loves quality artisanal products. Mulino Ribelle is an artisanal bakery and pasta shop that uses natural gluten-free flours, carefully researched and developed in-house, and the quality truly shines in every bite. I'm thrilled to have such a special gluten-free bakery close to home, perfect for those with celiac disease but also for those who love good food. They make traditional gluten-free piadina, cassoni, bread, and fresh pasta, such as cappelletti, passatelli, ravioli, tagliatelle, and maltagliati. I've tried them in so many places, but these are among the best, so good they'll please anyone. Their gluten-free pastries and artisanal leavened products (bread, panettone, and much more) are impressive: soft, light, and delicious, a true joy for celiacs and for family and friends who aren't intolerant. You can also have a gluten-free breakfast on-site, allowing you to enjoy everything at your leisure. Parking is very convenient: available in front of the shop or a few meters away, even near the church. A very positive note also goes to the staff: they're young, incredibly friendly, helpful, and always happy to listen, ready to explain their products and processes with passion and care. Finally, some good, fresh, wholesome, and rustic bread, even for us celiacs. Nothing packaged, even fragrant, but above all, TASTY. As a celiac, I had resigned myself to the FLAVORLESSNESS of gluten-free products. Instead, I tried two types of bread and panettone for Christmas, as well as fresh pasta, and I was pleasantly surprised. Thank you Mulino Ribelle. I'll be visiting you periodically, even though it's a little out of the way, but it's worth it.
