The staff is very attentive and knowledgeable. It is possible to order gluten-free pizza that is baked in a separate oven from the other pizzas. The dough is prepared in a contamination-free area. The menu also includes various alternatives to pizza, particularly the typical potato Tortel, which is also gluten-free and prepared without contamination risk. Melchiori srl also produces gluten-free beer that can be ordered as an alternative to cider, naturally gluten-free. Highly recommended!

They make potato tortel (a typical Trentino dish, VERY GOOD) with rice flour, and they are truly wonderful. I recommend it for both Trentino locals and especially for tourists! I also read that they make gluten-free pizza and risottos if desired, but I recommend the tortel. Additionally, you can have as much cider as you want and it's free, but they can't tell me if us celiacs can drink it or not, so well…
