I had a gluten-free pizza with lactose-free mozzarella, an old Modena for €13.00 + €2.50 for the gluten-free dough. The owner told us that they make the pizza dough themselves in a separate mixer (to minimize the risk of contamination), also adding a bit of chickpea flour to improve the flavor and make it less sticky during processing; they use sourdough.
