Excellent Vietnamese restaurant with a strong identity. For years, the owners have been very attentive to allergens; all ingredients are listed on the menu for each dish, and they assist in the selection with precise indications. Excellent cuisine, unique Vietnamese cocktails. One piece of advice: go without haste.

Recommended by friends who are experts in Asian cuisine, we booked through The Fork and entered at the scheduled time into this small place in the center of Florence. The open kitchen is commendable, both from the street and from the tables, but the air was a bit affected by the smell of the kerosene from the stoves placed in the corners of the restaurant. The staff was friendly and approachable, helping us in choosing the dishes, which were new and unknown to us. There might be too many tables, as we found ourselves sitting just 20 cm apart from each other. The women's bathroom was not exactly okay, but overall, the environment is quite comfortable. The food is really well-prepared with attention to detail, everything is extremely fresh and made to order. The seating is comfortable, though the chopsticks in our case were mismatched and the spoons were different (details, but maybe not). The waitress quickly tidied up the table next to ours as soon as it was vacated by the previous diners, and rather superficially brushed off some crumbs and flipped the paper tablecloth instead of changing it. The rolls paired with sauces are recommended, the soups are great, but less so for the village pork, which in my case was full of pepper and inedible. Excellent for vegetarians and gluten-free, there are lots of very interesting choices. Worth trying, maybe with a bit more luck.
