They are attentive and can precisely indicate which ingredients, sauces, and seeds do not contain gluten and which do. They also specify which might have undergone cross-contamination and which might not. They are careful about contamination, but with a very small kitchen, they obviously cannot guarantee anything. Generally, I would say that over 90% of the menu is naturally gluten-free, so the risk of contamination is still quite low, but not absent.
