On the occasion of the Sfincione fest in Bagheria, I ordered a portion of gluten-free rustic sfincione pizza. I waited three quarters of an hour for it to arrive because I wasn't told there would be such a long wait. I paid €3.50 for a 150g portion. It was almost half the size of the gluten version and costs more. The topping was good, but the dough honestly needs improvement. It was gelatinous, chewy, and overall unpleasant. It's a real shame to offer gluten-free options when you don't know how to do it well. There's so much competition in the gluten-free sector in the same Bagheria that it's worth putting in more effort and not leaving this bad first impression. I assume that ready-made mixes weren't used and that there was an excess of psyllium. What I suggest is to have someone who isn't celiac taste it and evaluate: if it’s not good for you, it won’t be good for us celiacs either.
