It probably doesn't need an introduction, but let's say I discovered it while searching for gluten-free ice cream shops, and I found one of the best ice cream shops in Italy... the cones are by far the best.

It has been designated as one of the best ice cream parlors in Italy and it fully deserves it. Flavors like chocolate or stracciatella have delicious chunks of chocolate inside, while the fruit flavors truly taste like the fruit. Even the cones and wafers are all gluten-free and very good.

On Friday, October 10th at around 9:40 PM, I tried the famous gelateria de' coltelli and the beginning seemed promising: gluten-free ice creams, flavors with high-quality ingredients, and packaged brioche. Seeing the brioche and their Sicilian origin, I asked for a brioche with ice cream. My request was denied on the grounds that the ice creams, unlike the brioche, are gluten-free; thus, there would be a risk of contamination. I was offered a scoop of ice cream with a separate brioche to stuff myself. I pointed out that I was not making a takeaway purchase and the absurdity that to eat on-site I had to stuff the brioche myself without any tools. I also represented that it would be sufficient to use separate utensils to avoid contamination. The staff member remained silent. I opted for a cone instead; I noticed that the girl was not wearing latex gloves and that the cones were in an open dispenser at the front and were not taken from below the dispenser with a napkin (taking the cone from the bottom, by the tip), but rather the cones were taken from the upper part (the wider one) with the fingers of the right hand and then subsequently held in the left hand with a napkin. After stuffing the cone, the same staff member proceeded to the checkout. I asked if it was hygienic and safe from contamination to handle food products while at the same time touching banknotes and coins; I was answered, in a acidic tone, that after each transaction a disinfectant gel is used (I did not see this happen) and I was invited with the same acidity to proceed with a negative review. In light of this, I reserve the right to report to the relevant authorities what I discovered. Ps: the ice cream was grainy.

5 deserved stars. Exceptional ice cream, with classic and refined flavors. All flavors and cones are 100% gluten-free, including sorbets, shakes, fruity, and vegan flavors. The only ice cream containing gluten is stored in a small fridge separated from the counter (it concerns the ice cream sandwiches, and they are clearly marked with an ear of wheat on the board). So the place is safe and suitable for celiacs, and has been part of the Aic circuit for years. The best in Pisa.

Natural ingredients, friendly staff, creative flavors. The granitas are amazing and the gelato is a must-try. There are flavors for all dietary needs (vegan, gluten-free...), making it a must-go for me when I'm in Pisa. Eco-friendly note: they use compostable cups and spoons, have a designated bin for disposing of everything once you're done eating, and only serve water in glass (kindly asking for the return of the bottles).

Gelato shop extremely prepared for intolerances and/or dietary choices! All product lists already include indications for gluten, lactose, vegetarian, and vegan options! Gelato "the old-fashioned way" made from ingredients and not from prepared mixes! Fresh and dried fruits (sour cherries, pistachios, hazelnuts, etc.) all with pieces of fruit! But above all, without too much sugar!!!

Delicious gelato, top-quality ingredients, and everything gluten-free, including the cones (without the risk of contamination that is often found in other ice cream shops, where the gelato is gluten-free but they use the cones, mix the scoops, etc.)! P.S.: If you also make gluten-free cookie ice cream, I’ll find a way to give you twenty stars!
